Dine for a cause: Tatler partners Ummi to support the people of Lebanon

It was another bustling Tuesday night at Ummi Lebanese Dining, as the final session out of Tatler Singapore and the restaurant’s charity partnership came to a close. This collaboration saw lunch and dinner events held on February 19, 20 and 25 to support the humanitarian crisis in Lebanon. As Lebanese executive chef Ali Assaf made his rounds at the tables, personally thanking guests for supporting this worthy cause, there was no visible sign of exhaustion on his face, even after powering through six fully booked services.
As he approached our table with a big smile, he shared that he was featured in a local magazine in his home country for working on this initiative that contributes to UNHCR, the UN Refugee Agency’s lifesaving work in his home country.
“This is the first [culinary event] in Asia which raises funds for Lebanon,” he enthused, and it was only fitting that his three-course menu was a celebration of the nostalgic flavours of his childhood in the historic city of Baalbek.

Sharing meals with loved ones is an intrinsic part of Lebanese food culture, as reflected in the mezze (appetisers) that are passed around at dining tables. Staying true to this tradition, Assaf kickstarted the meal with communal portions of silky hummus topped with chickpeas; fattoush salad comprising mixed vegetables, Lebanese sumac and crispy kadaifi for texture; and the quintessential moussaka, presented as two stacks of fried eggplant layered with a vibrant tomato sauce. A hallmark of Lebanese hospitality, the staff served a refreshing welcome drink as well as warm pita bread (perfect for mopping up the hummus) while the guests happily indulged in the starters.
While the first course was defined by bright and fresh notes, the main course showcased Lebanon’s love for bold flavours and aromatic spices. Thus, Assaf presented three options: succulent lamb meatballs seasoned with warm spices and nestled in a tangy yoghurt sauce; marinated chicken served with an aromatic rice imbued with spices; and charcoal-grilled capsicum stuffed with herb-infused rice and yoghurt foam.
With just enough space for dessert, Assaf closed the night with a simple but decadent muhallabia, rose-flavoured milk pudding topped with vanilla crumbs for texture, and a choice of Lebanese tea or coffee.
While the charity event has ended, Assaf told us that he will continue to support Lebanon by offering the special three-course menu until May 20. He continued: “All proceeds from this menu will go to Lebanon … we welcome everyone to book a meal [at Ummi], whether for intimate gatherings or group bookings.”
