The newly minted two Michelin-starred JAAN by Kirk Westaway at Swissôtel The Stamford presents new interpretations of its applauded ‘Reinventing British’ menu to welcome the arrival of Fall. Featuring a palette of the season’s finest produce, the new culinary masterpieces promise an elevated depiction of British gastronomy through a progressively modern and innovative lens that evoke the enchantment and heartwarming familiarity associated with Autumn’s natural beauty and colours.

Perfectly Executed Starters

The exquisite dining experience begins with a quartet of delicate snacks, inspired by British classics. The Cucumber Meringue features a light, billowy meringue sphere topped with pickled cucumbers, fresh
fennel and a fennel flower for a refreshing start. Light and flavourful, the Black Olive & Chickpea features
a crispy tapioca chip dotted with chickpea hummus and cumin yoghurt, topped with a crispy black olive
cracker and dusted with cumin and salted lemon before serving. Made to order, each elegant Buckwheat
Waffle is filled with soft cream cheese and completed with a spoonful of Kristal caviar for a delicate, rounded flavour that is light to the palate. The iconic Goose Moose rounds off the snack menu, followed by a velvety Roast Leek and Potato Soup studded with macadamia nuts and served with a fresh onion loaf.

Enchanting Plates

The first course, Salt Baked White Beetroot with Kristal Caviar, is an invigorating cold dish that celebrates the humble white beetroot. Each paper-thin sheet of tender white beetroot is rolled into a cylindrical shape that envelopes a soft cheese topped with a touch of freshly grated horseradish. Pearls of Kristal Caviar and autumnal blooms adorn the beautiful white curls, coupled with a touch of zesty lime sauce. To finish, a rich cream sauce with dill is served alongside to further accentuate the flavours in the dish.

The Hens Egg with Barbecued Celeriac and Black Truffle is a refreshed interpretation of British eggs and soldiers imbued with a new dimension of deep, smoky flavours. The yolks of the best organic eggs are perfectly slow-cooked in olive oil to form a rich custard. Underneath is a delectable combination of diced black truffles and celeriac that is delicately burnt over a bed of glowing embers to lend the dish an earthy, smoky accent. A toasted soldier sandwiching a melted 10-month-old Berkswell cheese from Coventry sheep accompanies the egg to create a harmonious balance of beguiling flavours and textures.

The third course is a luscious Scottish Lobster with Hipsy Cabbage and Brown Butter that is
lightly blanched and roasted to perfection, served with beautifully roasted hipsy cabbage stuffed with lobster
trimmings and onions. The elegant dish is swimmingly paired with a warm brown butter mayonnaise made
fresh every hour, and a velvety lobster sauce. The next course, Cornish Seabass with King Crab and Sweet Leeks, is a beautiful symphony of seafood featuring lightly poached seabass sitting atop a medley of black mussels, razor clams and king crab cooked in an umami broth made with an equal measure of vegetable and seafood stock. The ocean flavours are elevated with a delightful, uplifting touch of fresh parsley, parsley oil and lemon juice.

Exclusive to the six-course lunch and dinner menu is the Scottish Scallops with Pumpkin. Featuring precious parcels of poached scallops that are lightly brushed with seaweed butter and encased in Swiss chards, they are surrounded by ribbons of pickled pumpkin. To finish off, a velvety roasted pumpkin sauce with a subtle hint of curry spice is poured around to add a distinct warmth to the dish.

For the final course of Welsh Pork Loin with Green Peppercorn and Mustard Sauce, each succulent pork loin is first braised in a pork stock perfumed with roasted onions and garlic before being chargrilled to perfection. The deep, smoky flavour of the meat is balanced with the endearing sweetness of sand carrots and finished with a swipe of crisp green peppercorn and mustard sauce; encapsulating the colours and flavours of Autumn perfectly.

Exquisite Finale


The prelude to dessert features a refreshing Cucumber Sorbet with a Gin and Tonic, inspired by the
quintessentially English Cucumber Gin and Tonic. Made from fresh cucumber juice, the delectable cucumber
sorbet is served atop fresh lemon jelly and finished with a splash of Hendrick’s Gin tableside.

Reminiscent of an autumn landscape, the handcrafted Pear Caramel evokes the enchantment associated
with the natural beauty of fall foliage. A mesmerising interlace of thinly sliced and caramelised Conference
pears sit atop a delectable pear chutney, ensconced within a delicate puff pastry shell shaped like an auburn
leaf. The dessert is paired with a scoop of vanilla ice cream decorated with crispy autumn leaves to delicately
balance its richness.

Guests can also choose to indulge in the heart-warming Dark Chocolate and Coffee. Showcasing a
judiciously arranged ensemble of light, medium and dark chocolate thins, it brings complexity and depth
through a coffee crumble and caramel layered cake; and a caramel parfait served alongside.

The mesmerising Autumn experience is completed with a serving of Final Sweets including Devon Cream
Tea, a roasted Fig Tart crowned with a slice of fresh fig and a scoop of pistachio cream, Coffee
Chocolate and Almond Caramel.
